Home Made Marshmallows

Cupcakes are my passion but I also love to create and play with different recipes and ideas, looking for something new to add to my "Treats" I came accross Home Made Marshmallows. I thought to myself that it would be such a great challenge and the end results could be amazing! So as I read on and did more reasearch I found it to be a TWO day process, something im not quite used to! After shopping and gathering all the materials, the journey to Marshmallows started.....


Corn Syrup, Candy Thermometer, Gelatin and Creativity.. Its what I needed for this new endeavor. First, I have never used a candy thermometer and was intrigued in the way it worked, (the smallest things intrigue me as you can tell) stick it in the boiling syrup and watch it rise!


After the Syrup reached the perfect Temperature, 224 degrees F, I then mixed it in for what seemed like forever till it finally started reaching the "marshmallow fluffy" consistency, at this point you can add any flavoring or any color you desire for the end result, I opted for traditional Vanilla.




It was now ready to set and wait for it to all turn into a Fluffy Marshmallow! So I set it in the pan and watched it turn into the fluffy goodness I was waiting so patiently for...Unfortunately, I had to let it sit overnight and my impatient-ness kicked in! I like things done and finished right then and there!! I checked on it at least 5 times and realized I just needed to "sleep it off"


Morning finally came and I felt like it was Christmas!! I was so excited to see what was waiting for me and I was not disappointed! Voila! Home Made Fluffly Marshmallowy Goodness....





I then made them into Pops and dipped them in White Chocolate and added Sprinkles! These are inspired by Baby Bella's upcoming 1st Birthday!!!

French Macaron Cookies

There is just somethin so pretty and dainty and delicate abut this cookie. It melts in your mouth and is so full of flavor. So delicate in fact that if one step is done incorrectly it will throw the whole "daintyness" out of it. This brinigs me to recipe nmber three, try number 182364987493.....! I am finally fully satisfied <3

The Macaron shell, when baked correctly, puffs up and has a little "foot" aroud itself.

Since I was so happy in how the Macarons baked, I decided to hand paint some "happiness" on to the shells. I love Summer and decided to incorporate more colors...



I filled the "sandwhiches" with Fresh made Kumquat Jelly (Courtesy of my boyfriends mama!) Again, an extra pop of color and an amazing citrus flavor against the smooth and sweet Macaron shell...

Cookies and Milk

 After your day is just about at it's end, isnt it nice to treat yourself to something sweet? Well in my case, that is a MUST! I have such a sweet tooth for everything and anything sweet! A nice cold glass of milk and something sweet is just the perfect combination....

Out comes the delightful combination of coffee, chocolate and caramel. The sandwhiches are small so its not an overwhelming sense of sugar rushing at you! Perfect way to end your morning or start your day!!!

Coconut Cupcakes!



With the end of summer right around the corner, I like to keep the flavors and smells of it around for as long as I can! The smell of Coconuts takes me to my happy place; the beach! Summer, Sand and Tanning oil (of course)!


So with that came the Coconut Cupcake! Just to take us a little bit closer to the tropics, I used Coco Real which is used in Pina Coladas and other different drinks, but it also helps create the delicate and moist texture of the Cupcake itself. Then to top it all off, I rolled it in even MORE Coconut, shredded sweet Coconut.... I enjoyed this one, hope you do too!!!
